Virtual Machines Question

Hi guys, I run my PMS in a windows server 2012 based VHDX

I currently have my appdata residing on the same SSD as my vhdx, but not contained within it. I have it symlinked to the folder it should be in.
Are there any benefits to having my appdata contained within the VM rather than alongside it on the same drive? The only big benefit I can think of myself is that if I want to move the installation to another drive, it will be substantially faster to move the data as a container instead of all of those millions of files 1 by 1.

Another separate question. Does any one know the possible performance gain of PMS on esxi server vs hyper-v?

My system is a dual e5-2670 with 64 GB ram. I currently give plex 16 gb of ram. Is there any benefit to giving it more RAM?
