Plex Media Server on Windows 10 Using Large Amounts of Storage

I recently had to create a new Windows 10 Pro account as my previous one was corrupted enough with WIn10 updates that enough Windows things were no longer working properly. Plex was running fine and is Version 1.5.5.3634. I ran into a problem where my Plex metadata has become very large after getting going in the new Windows account.

To move Plex to the new account, I copied the Plex metadata files over from the previous account and installed Plex when logged into the new account. All media files have been in the same place all along. Things went along fairly well I thought, until later that night when I noticed that the Plex server was very active. It turned out that some of the default settings generate a lot of activity and eat up a lot of disk space. I should have noticed this when doing the install, but was not thorough enough.

The Plex Server metadata on the original profile was about 50 MB. That had all of the metadata that I needed to keep me happy. The new profile now takes up 15 GB! I did turn off all of the settings I could find such as "Generate video preview thumbnails" and "Generate chapter thumbnails", etc, but not until it was too late.

So far I have gone through all of the "Delete thumbnails", "Clean Bundles" and "Empty trash" on all of the libraries. Even after restarting Plex server, these did not change the storage amount.

I have since removed the photo album and deleted the "PhotoTranscoder" folders to save about 5 GB of space. After adding the photo library back again, the PhotoTranscoder folder is holding at 200 MB.

I would like to reduce the Metadata amount substantially, but I am not sure what the best approach might be. The attached snip shows the current folder sizes. I really don't want to lose all of my "date added" and viewed info.
