Roku Media Player and Plex Media Server on Different Networks

I have a Roku Ultra, Version 4.2, build 75079015. I am trying to use the Roku Media Player to access my Plex server, version 1.5.6.3790 running on Ubuntu version 16.04.

Everything seems to work okay (i.e. Roku finds the Plex server and plays media) if my Plex server and Roku device are on the SAME network segment (e.g. 192.168.1.x). In addition, I can play movies on my iPhone using the Plex app when I'm away so I know that "Remote Access" is configured correctly as indicated by the green checkmark icon (I have the port forwarded on my router and "Manually specify public port" is checked in the Plex Media Server settings).

However, I would like my Roku devices on a different local network segment (e.g. 10.1.10.x) from my Plex Media Server to also be able to work. In addition, I would like to be able to have my Roku device "find" my Plex server when I'm traveling (i.e. from the internet). From what I can see, however, there doesn't appear to be a way to "point" the Roku device to a specific IP address (i.e. it seems to ONLY search the local network segment).

Is there a way to get Roku Media Player to look for a Plex Media Server at a specific IP address? Note that I recognize that this is probably a Roku Media Player issue. I've contacted Roku technical support though and they seem to be pretty clueless and insisted that "there is a setting on the Plex Server to link the two accounts" (presumably my Plex account and my Roku account), however, I can't find anything like that. Any assistance or suggestions would be appreciated! Thanks.
