5.1 audio mkv,but don't have 5.1 setup

i have a bunch of 1080p MKV with 5.1 audio,but I dont have a 5.1 setup. I have a Vizo soundbar. Can I set the roku to play AAC stereo or will it just play the original 5.1?? would like to make it globally if possible
