Need help ... why is my mp4 file getting transcoded and what should my ffmpeg settings be?

Hi,
I am trying to use Plex to be a dvr with android friendly files that do not need to be transcoded.
After plex remuxed the hdhomerun file to mp4 container I ran it through a script I found to get the mpeg2 and ac3 codec copied to h264 and aac. but it still needed to be transoded ... ugh... what needs to be changed?

I have an mp4 file with the following details -

**If someone can tell me what codec/bitrate/values need to be changed that would be great.
Also if someone can tell me what exactly in this log I am looking for and how do I get a cleaner log that does NOT show all the debug information in it? **

What words, etc, do I need to search on in the log to key in on why it is transcoding?
